Peugeot offers six unique spice-specific mechanisms plus the original burr-style coffee grinder, each designed to get the most out of the intended spices. The Peugeot Pepper Grinding Mechanism is a two-stage burr-style system that cracks and then grinds peppercorns to a consistent size, releasing the pepper's essential oils. The Peugeot Salt Crushing Mechanism features two ribbed plates that fracture and crush coarse, dry sea salt to a consistent size.
Peugeot's patented u'Select grind control system allows for quick, easy, and accurate adjustment of the grind settings, offering six pre-defined levels of grind for both pepper and salt, or any point in between. This ensures the right grind for each dish, from coarse to fine.
To get the best results, Peugeot recommends using dry, hard, whole peppercorns that are 5 mm (1/4") or less in diameter, and dry salt with a diameter of 4 mm (0.16"), such as coarse sea salt or rock salt. Damp salt should be used in a Peugeot Wet Salt mill with a mechanism specifically designed to resist salt corrosion.
