The Peugeot story began in the 19th century when the Peugeot brothers converted their family's gristmill into a steel foundry, immediately producing award-winning hand tools and later expanding into a diverse range of exceptional quality products, including small appliances, bicycles, and most notably, automobiles. In 1840, Peugeot created their burr-style coffee grinder and adapted that design to accommodate peppercorns in 1874, resulting in the iconic pepper grinding mechanism that is still used in every Peugeot pepper mill today.
Peugeot's commitment to quality and innovation has made their mills and grinders the benchmark of the industry, with a variety of spice-specific mechanisms designed to get the most out of the intended spices. The primary difference between Peugeot and other brands is these spice-specific mechanisms, with Peugeot offering seven unique mechanisms for pepper, salt, herbs, spices, coffee, wet salt, chili peppers, and nutmeg.
Peugeot's Pepper Grinding Mechanism is a two-stage burr-style system that first cracks and then grinds the peppercorns, releasing the essential oils and resulting in more flavor and aroma. The mechanism is made of case-hardened steel, making it virtually indestructible, and is fully adjustable, producing grinds ranging from very coarse to powdery. The Salt Crushing Mechanism features two ribbed plates that work to fracture and crush coarse, dry sea salt to a consistent size, and is made of corrosion-resistant stainless steel.
Peugeot's patented u'Select grind control system offers six pre-defined levels of grind for both pepper and salt, or any point in between, allowing for quick, easy, and accurate adjustments to the grind size. This feature ensures the right grind for each dish, as different stages of the preparation and cooking process, as well as different dishes, often call for seasonings of varying sizes.
When using Peugeot mills, it is recommended to use dry, hard, whole peppercorns that are 5 mm (1/4") or less in diameter, as well as dry salt with a diameter of 4 mm (0.16"), such as coarse sea salt or rock salt. Damp sea salt should be avoided, as the high moisture content can corrode the mill, and a Peugeot Wet Salt mill should be used instead.
The Peugeot mill body is made of beechwood, and the mills should be hand-wiped with a soft cloth for maintenance. Peugeot mills are partially filled with salt at the factory in France as part of the final assembly and testing process.
